This easy salad comes with all the fixings.
Turkey Bacon Cobb Salad
- 1/2 teaspoon neutral oil
- 3 slices of bacon
- 2 eggs
- 4 cups mixed greens
- 1 cup cooked turkey torn into pieces
- 1 cup baby tomatoes halved
- 1/4 cup radishes sliced thin
- 1/4 cup aged cheddar cheese cubed
- 3 tablespoons mayonnaise
- 1 garlic clove minced
- 1 teaspoon lemon juice
Heat oil in a pan on medium-high heat. Cook bacon until desired crispiness. Set on a paper-towel lined plate, and cool for 1-2 minutes for breaking into bite-sized pieces.
Meanwhile, cook the eggs. Bring a small pot of water to a rapid boil, then carefully place eggs in the pot. Cook for 8 minutes, then plunge in a bowl full of ice water for 5 minutes before peeling.
Prepare the dressing. In a small bowl, whisk together the mayonnaise, garlic and lemon juice. Season with salt and pepper to taste.
Assemble greens in a serving bowl of your choice. Top with cooked turkey, bacon pieces, hardboiled eggs, baby tomatoes, radishes and cheese. Drizzle with dressing and serve immediately.
