Turkey Cobb Salad

Turkey Bacon Cobb Salad

  • 1/2 teaspoon neutral oil
  • 3 slices of bacon
  • 2 eggs
  • 4 cups mixed greens
  • 1 cup cooked turkey torn into pieces
  • 1 cup baby tomatoes halved
  • 1/4 cup radishes sliced thin
  • 1/4 cup aged cheddar cheese cubed
  • 3 tablespoons mayonnaise
  • 1 garlic clove minced
  • 1 teaspoon lemon juice


  1. Heat oil in a pan on medium-high heat. Cook bacon until desired crispiness. Set on a paper-towel lined plate, and cool for 1-2 minutes for breaking into bite-sized pieces. 

  2. Meanwhile, cook the eggs. Bring a small pot of water to a rapid boil, then carefully place eggs in the pot. Cook for 8 minutes, then plunge in a bowl full of ice water for 5 minutes before peeling. 

  3. Prepare the dressing. In a small bowl, whisk together the mayonnaise, garlic and lemon juice. Season with salt and pepper to taste. 

  4. Assemble greens in a serving bowl of your choice. Top with cooked turkey, bacon pieces, hardboiled eggs, baby tomatoes, radishes and cheese. Drizzle with dressing and serve immediately.
