One pan, six ingredients and ready in under 30 minutes!
Sheet Pan Steak with Potatoes and Broccoli
- 2 cups baby potatoes halved
- 1 medium flank steak
- 2 cups broccoli florets
- 1 tablespoon olive oil
- salt and pepper to taste
- 1 cup basil pesto to serve
Bring a large pot of water to a boil. Par-boil the potatoes for 1-2 minutes, drain and set aside.
Tenderize the steak with a mallet. Heat oven to broil (high).
Assemble potatoes, broccoli florets and steak on a sheet pan in one even layer. Drizzle with olive oil, and season with salt and pepper. Place in the oven for 10-15 minutes, flipping the steak at the half-way mark, and giving the veggies a toss. It’s good practice to keep an eye on the oven during this process.
Once cooked through, let steak rest 5 minutes before slicing into strips and serving with pesto (optional).
