Roasted Garlic Yogurt Hummus

Ingredients

  • 2 cups Liberté Méditerranée yogurt
  • 1/2 cup tahini
  • 3 heads of garlic roasted, skin removed
  • 1 lemon zested
  • flaky sea salt to taste
  • dukkah to garnish (optional)
  • micro greens to garnish (optional) various vegetables, in bite sized pieces

Instructions

  1. Heat oven to 400. Slice tops off the garlic heads, and drizzle with olive oil. Season with a pinch of salt. Place in a baking dish and cover with foil. Bake for 45-60 minutes, until garlic is tender and cooked through. Let cool for 10-15 minutes before handling.
  2. In a food processor or blender, combine yogurt, tahini, roasted garlic, lemon zest, and salt to taste. Blitz until completely smooth, then transfer mixture to the refrigerator for 15 minutes to chill.
  3. Top with dukkah seasoning and micro greens (optional). Serve with a selection of vegetables.
