Double Chocolate Coconut Cookies

We’ve got four words for you — Double Chocolate Coconut Cookies. 

This is the kinda cookie that your gonna need a glass of milk with or even a nice shot of espresso! Really, the perfect mid-week treat.

These lovely creations were made with a recipe we found from The Food Network. We had all the ingredients on hand, so we went at it. 

For these decadent mouth-waterers you’ll need…

  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 stick unsalted butter, at room temperature
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg
  • 3/4 cup sweetened coconut flakes
  • 1/2 cup semisweet chocolate chips

Start off by preheating the oven to 350 degrees. We have a non stick cookie sheet so no need for parchment paper. Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a medium bowl.

Add the room temperature butter, white sugar and brown sugar to a large bowl and beat with an electric mixer until ingredients have mix throughly together, about 4 minutes. Next add vanilla and egg, and beat until incorporated.

Take your well-mixed batter and fold in chocolate chips and coconut flakes.

Now it’s time for the DIRTY, FUN part! ;)

Use your (clean washed) hands to your roll dough into golf ball sized balls, and drop 8-12 depending on the size of your pan. You can use an ice cream scoop or two spoons if you don’t wanna get messy. But that’s no fun!

Place inside your preheated oven for 13-15 minutes (also depending on size of your cookie). Let them sit for a moment, then move them to a wire rack to cool.

We baked the first batch just a little bit too long, and thought they were slightly too sweet. The second batch, we made bigger cookies, about twice the size — and watched by eye, and they turned out great. Moist, soft and not hard the next day. So perhaps bigger is better in the case of this Double Chocolate Coconut Cookie. 

Whatever, we had no trouble eating ALL OF THEM!
