Coffee Hazelnut Cinnamon Buns

Ingredients

Dough

  • 1 cup milk
  • 2.5 tablespoon yeast
  • 5 tablespoon butter
  • 1 tablespoon fine ground coffee
  • 3 tablespoon brown sugar packed
  • 1 teaspoon salt
  • 2 cups bread flour

Filling

  • 6 tablespoon butter
  • 6 tablespoon brown sugar
  • 2 tablespoon ground cinnamon
  • 1 tablespoon fine ground coffee
  • 1 tablespoon black cocoa or dark cocoa
  • 3/4 cup hazelnuts toasted and crushed

Topping

  • 1 egg
  • 2 teaspoon milk
  • 2 tablespoon brown sugar
  • 1/4 cup  hazelnuts toasted and crushed

Instructions

  1. In a small pot, warm milk on medium heat. Do not boil. Transfer to a bowl, and let cool slightly.

  2. In a mixing bowl, sprinkle yeast on top of the milk. Mix and set aside, until foamy.

  3. Combine the butter, coffee, sugar, and salt in large bowl. Add to the milk mixture, and then add flour.

  4. Mix and knead for about 10 minutes, until the dough is smooth and elastic. Cover to dough and let it rise until doubled in size about 45 - 60 minutes.
  5. While that's proofing, cream together all of the filling ingredients, except the hazelnuts.

  6. Once doubled in size, slice an X half way through the dough and pull the corners out to the edges creating a square.

  7. Roll dough out to 12 inch long and 10 inches wide, and spread butter filling all over, leaving a 1/2 inch on either end. Sprinkle 3/4 of the crushed hazelnuts, saving the remainder for the topping. Roll from the bottom to the top and slice into 1 inch buns.

  8. Let cinnamons buns rise for 30-45 minutes, covered with a clean kitchen towel. 

  9. Line a baking tray with parchment paper and preheat oven to 450. 

  10. In a small bowl, whisk together the egg and milk until well incorporated.

  11. Brush edges of proofed buns with egg wash and sprinkle with a little brown sugar and more crushed hazelnuts to finish.

  12. Bake for 30-45 minutes, or until golden brown.
