Big Gay Potato Salad
The Food Gays like things fast and easy, and if you’re anything like us, you’ll love this simple tasty side dish.
- Small red skin potatoes, 1 bag
- Green Onions, 4 stocks
- Large eggs, 8 hardboiled
- Celery, 4 stocks
- Mayonaise, half cup
- Salt & Pepper, to taste
- Cayenne Pepper, pinch
Bring a large pot of water to a boil, and add your diced potatoes. We like to leave some big chunks for texture, but whatever floats your boat. Cook until tender, then drain and pop it in the fridge for at least 6 hours. Once cool, add diced celery and onions, chopped hardboiled eggs, mayo, and seasoning to taste.
It’s a quick and easy meal, and uses a lot of ingredients you probably already have.
Watching your waistline? Swap the mayo for low-fat regular yogurt, and add a squirt of fresh lemon for some acidity.
Who doesn’t love tossing a salad on a hot summer day?
