Beet-Whipped Ricotta Toasts

For Beet Whipped Ricotta

  • 1 small beet quartered and steamed
  • 1/2 cup ricotta cheese
  • 1/2 lime juiced
  • pinch of salt


  • 1 small beet sliced thin
  • 1/2 lime juiced
  • your favourite bread toasted
  • zucchini sliced into ribbons


  1. Make the beet whipped ricotta. In a blender or food processor, combine 1 cooked beet with ricotta cheese, lime juice and a pinch of salt. Blend until completely smooth. Chill in the refrigerator at least 30 minutes to set.

  2. Prepare the lime-spiked beets. Slice thinly, place in a bowl, and squeeze juice of the remaining half lime. Toss and chill in the refrigerator until serving.

  3.  Slice zucchini into ribbons using a vegetable peeler. Toast bread, smear with beet whipped ricotta, and top with zucchini and lime-spiked beet slices. Serve immediately.
